Who’s Behind Palace Recipes?

Hi, I’m Lauren Bennett — the voice (and hands) behind palacerecipes.com.
I’m 40, married to Derek (43), a night-shift nurse who saves lives while I try not to burn the cookies. I’m also mom to Jonas (12), who has a gluten allergy, and Ellie (8), who insists every dessert needs “magic” in it — usually sprinkles.
And then there’s Coco, our senior ginger cat who thinks the kitchen counter is his throne.

For years, my life felt like a long list of to-dos: school pickups, Derek’s upside-down schedule, allergy-safe meals, dishes piling up, and always that “what can I possibly make with this?” moment at 6PM.
Cooking, which used to bring me joy, started to feel like another job — until one night, with an almost-empty pantry and a tired heart, I found three things: peanut butter, sugar, and an egg.
Twelve minutes later, I had cookies. And something in me shifted.
Ellie called them magic. Jonas smiled — actually smiled — after a long day. And I… I remembered why food matters.
Why I Started This Blog
Palace Recipes was born from that one small victory: a cookie that didn’t need a mixer, a degree, or a grocery run.
I created this blog for the overwhelmed parent, the tired student, the “I can’t bake” person.
Because I know what it feels like to want comfort — fast — without ten ingredients and an anxiety spiral.
This blog is for minimalist bakers with real lives.
It’s about baking soft, warm, peanut butter cookies when your brain’s on 2%. It’s about making something sweet from almost nothing. And feeling like you’ve done enough.
